New Feldenkrais Core Lessons for Runners!

Recipe of the Month: Flourless Pancakes for One


Try these healthy and satisfying pancakes before your head out on your next long run.

Flourless Pancakes for One

Ingredients:

  • ¼ rolled oats
  • ¼ cup low-fat cottage cheese
  • 1 egg
  • 1/8 tsp baking powder
  • ½ tsp cinnamon
  • salt (optional)


Directions:

  1. Mix all ingredients together.
  2. Heat skillet coated with cooking spray over medium low heat. Pour mixture into skillet as two pancakes.
  3. Cover and fry for 4-5 minutes or until bubbles form on top. Flip pancakes and fry on other side for about one minute.
  4. Remove from pan and serve with berries.
