Salmon Burgers

My friend, Juliana, gave me this recipe to try. It is one of her family's favorites and it may become one of yours. The burgers were delicious and they are so quick and easy to make!

Salmon Burgers

  • 1 (16 oz) can of salmon, drained and flaked
  • 2 eggs
  • ¼ cup chopped Fresh Parsley
  • 2 tbsp finely chopped onion
  • ¼ cup bread crumbs
  • 2 tbsp lemon juice
  • ½ tsp dried basil
  • A pinch of red pepper flakes
  • 1 tbsp oil for cooking

  1. Mix well all ingredients together except oil in a medium sized bowl. Shape into 6 firmly packed patties about ½ inch thick.
  2. Heat oil in a large skillet over medium heat. When hot, add cakes and fry for about 4 minutes on each side or until nicely browned. Serve with sauce below (optional).
Lemon Mayonnaise Sauce

In a small bowl, mix together 2 tbsp light mayonnaise, 1 tbsp lemon juice and a pinch of dried basil.
